The magic of the season glows in The Ice Cream Polar Bear

Is there ice cream inside?  Oh yes…

There are actually 3 kinds of local ice cream (from Reid’s Dairy) inside the bear!

Do I need to keep it frozen? Nope…

The ice cream is freeze dried.  It’s light and crunchy and tastes… like ice cream!

So, the bear is solid dark chocolate, mixed with crispy rice.  Into this mixture we smooosh the chunks of freeze dried ice cream as well as nuggets of sponge toffee that we make with local maple syrup.

This creates layers of texture, flavour and colour – there’s a lot going on in side the bear!

(BTW, ‘smooosh’ is a technical term in the chocolatier’s vocabulary)
