Canada’s first wheat, Red Fife, was grown a only few kilometres from our stuido, for the first time in 1842. It has a nutty, robust flavour that Canadians have enjoyed for over 180 years. A baker in Brighton (My World Kitchen) bakes beautiful loaves with this wheat, which we slice thinly, toast deeply and then grind into a caramelized white chocolate with fragrant Darjeeling tea.
A silver medal winner in the International Chocolate Awards, 2019 Canadian Competition. Also a winner of the Innovation in Chocolate Award.
