To craft this bar, we start with award-winning bean to bar chocolate: Kilombero by Desbarres Chocolates.
To this, we add winter savory with its complex flavour profile including notes of thyme, pine and mint. This winter savory is grown by Tamarack Farms, a local, regenerative farrm.
Preserved lemon adds delicate notes of salt and gentle acidity.
Savour it on its own or as an inspired addition to a cheese or charcuterie board.

Tamarack Farms is a 390 acre working farm in Northumberland County, Ontario. We are rehabilitating land that had been fallow for more than half a century. Essential to our farm’s philosophy is a deep and uncompromising respect for the land and the treatment of our animals.
We follow a traditional, mixed farming model, respecting the inter-relationship between raising livestock on pasture, growing heirloom produce, herbs, and edible flowers, making maple syrup in our old growth woodlots, and respecting wetlands.
