Lavender and salt are a classic flavour combination from the south of France.  And classics can be made more decadent with chocolate… and toffee…
We start by using local butter to make a big sheet of English toffee.  We break it into shards and sprinke them into our 70% dark chocolate, already infused with local lavender flowers and sea salt from the Newfoundland Salt Company.

A bit more lavender and salt is sprinkled on top, just to make your taste buds sing… en français.

Newfoundland Salt Company

Peter and Robin were both born and raised in Newfoundland, but spent most of their 20s and 30s away. Funnily enough, they dated when they were both in high school only to reconnect 20 years later, after each felt the call of home. Peter and Robin began making sea salt in 2011 and incorporated their business in early 2012. Peter perfected his method of salt making at a restaurant in St. John’s where he was working as a chef at the time. Robin, who has a background in fashion and customer service, has shaped the company and brand into what it is today. Peter and Robin began selling their first batches of sea salt at a local farmers market, specialty shops and chefs before relocating to Bonavista in 2017 to make sea salt full time. On any given day, you will find both Peter and Robin busily working away at their production facility on Church Street.

Golden Dawn

The Alliston Creamery is a small, family-owned business. Located in Alliston, Ontario, approximately one hour north of Toronto, and 30 minutes southwest of Barrie, we are the last independent creamery in Ontario.

We manufacture and sell salted and unsalted butter, in 1 pound prints and 25 kilogram blocks, under our Golden Dawn brand. Our butter is made in small batches using barrel churns, and has consistently been recognized for its taste and quality.

We are also proud to manufacture and distribute a large selection of specialty butters under private labels and co-packing. This includes organic, grass-fed, cultured, goat, water-buffalo, and flavoured butters. Distribution of these butters stretches from Windsor to Ottawa, and up to Espanola and Sault Ste. Marie. Our main source for cream and distribution of our butter is in the Golden Horseshoe (Toronto – Niagara Falls).

The Kennedy family has owned and operated the Creamery since 1968. There have been many changes to the dairy industry over the past 50+ years, but we continue to meet these challenges and welcome new ideas to enhance our business.

We are a BRC certified federally-regulated plant, and are pleased to be certified for Halal, Kosher, and Organic production.

Amethyst Hills

We are known for our lavender fields, vineyards and apple trees. The lavender fields blooming through the summer are stunning and something everyone should have a chance to see at some point.

During the warmer months, we are open most days, just call ahead so we can ensure there is not an event on that day. There is plenty of open space for kids to run around which makes it easy for you to walk around or sit back and relax.

2021 brings some exciting news as we will start wine production and building the wedding venue! The wedding venue will host spectacular views of the lavender fields and vineyards. We plan to accommodate up to 100 guests and the venue is flexible to different styled events. We have two venue spaces — The Cellar Room and The Lavender Room.
