It’s a mystery to me why tarragon hasn’t become a common flavour in chocolate (like mint for example). It has an aromatic, herbal quality that is similar to fennel but gentler and much more complex. With hints of pepper, vanilla and mint, it’s hard to pin it down as a single flavour.
We blend tarragon into a dark milk chocolate with crumbled butter toffee for a caramelized crunch.
Our friends at School House Gardens supply us with a veritable bale of tarragon every year, so we’ll be able to create this flavour for years to come!
Schoolhouse Gardens is nestled in Northumberland Hills not far from the village of Warkworth. In 1942 the school yard won the Grounds Improvement Award. Then in 1987, Dennis and Tom (present owners) embarked on creating a park. The gardens now encompass just over 4 acres and our collection of peonies now number almost 300 varieties. Last June we won a trophy at the Canadian Peony Show in Winnipeg for the Best hybrid peony at the show, along with 3 Grand champion ribbons. The gardens were also featured in a glossy garden book, Private Gardens of Northumberland. A vast renovation of the gardens include plantings of many new hostas, daylilies, perennials, trees and shrubs. Minimum group of 6. Garden tours available by reservation only.
The Alliston Creamery is a small, family-owned business. Located in Alliston, Ontario, approximately one hour north of Toronto, and 30 minutes southwest of Barrie, we are the last independent creamery in Ontario.
We manufacture and sell salted and unsalted butter, in 1 pound prints and 25 kilogram blocks, under our Golden Dawn brand. Our butter is made in small batches using barrel churns, and has consistently been recognized for its taste and quality.
We are also proud to manufacture and distribute a large selection of specialty butters under private labels and co-packing. This includes organic, grass-fed, cultured, goat, water-buffalo, and flavoured butters. Distribution of these butters stretches from Windsor to Ottawa, and up to Espanola and Sault Ste. Marie. Our main source for cream and distribution of our butter is in the Golden Horseshoe (Toronto – Niagara Falls).
The Kennedy family has owned and operated the Creamery since 1968. There have been many changes to the dairy industry over the past 50+ years, but we continue to meet these challenges and welcome new ideas to enhance our business.
