Sandy Flat Sugar Bush – Warkworth

Nuggets of maple sponge toffee dipped in dark chocolate. Crunchy, caramel-y and with a growing cult following.

Sponge toffee is known by many names: honeycomb, seafoam, cinder toffee, fairy candy… But after a bite of this perfectly crunchy, maple-laced confection, most people just call it ‘Heaven’.

Seven kilometers from our chocolate studio is  Sandy Flat Sugar Bush – a family owed and operated business. They are the hub of the Warkworth Maple Syrup Festival and create a sweet array of maple-based products year round. What could be a more Canadian ingredient to blend into chocolate?

We use their maple syrup in six of our recipes and in the limited-edition Maple-licious Bar, crafted each year during the festival.
